Cooking With Salt Cured Egg Yolks

Salted egg yolks are yolks that’ve been cured in salt, which solidifies them and offers a whole new way to incorporate eggs into your dishes. These yolks can be grated, sliced or even mashed to add a rich garnish and pop of golden colour to your recipes.

While you can make your own salted egg yolks relatively easily, the curing process can take a while. The recipe below includes ready-to-use cured yolks, which you can find at your local Asian supermarket – or right here at Oriental Mart!

Golden Squid Ingredients

For the salted egg yolk seasoning:

  • 2 salted egg yolks, mashed
  • 2 tbsp butter
  • ½ onion, chopped finely
  • 3 spring onions, chopped finely
  • 3 bird eye chillies
  • 1 tbsp salted egg yolk sauce

How to Make Golden Squid

  1. Defrost the squid overnight. Drain the excess water and use some kitchen towel to absorb any extra liquid.
  2. Season with salt and Sichuan pepper, then toss in the potato flour.
  3. Have a pan of oil ready – you’ll know it’s hot enough when you insert a chopstick and see bubbles around it.
  4. Deep fry the squid for a minute.

For the salted egg yolk seasoning:

  1. Heat a non-stick pan and add some butter.
  2. Add in all the seasoning ingredients.
  3. Stir fry for a few minutes until it’s fragrant.
  4. Add the fried squid and serve it with salted egg yolk mayo for an extra moreish, umami flavour.
