5 Korean Dishes Using Egg
All around the world, eggs are used as a staple ingredient in many dishes. In South Korea, there are many dishes that utilise eggs, whether they form the basis of the meal, or simply top off a dish. We take a look at some of the most popular egg-based dishes in Korean cuisine, and how you can make some of our favourites!

Bibimbap
Bibimbap is a classic Korean dish, which can often include an egg on top. In Korean ‘bibim’ means mixing various ingredients, while ‘bap’ means rice, so the dish is essentially rice topped with a range of ingredients. Common ingredients used include vegetables, kimchi, beef and raw or fried egg. Bibimbap is a great dish to make when trying to use up leftover ingredients and food!
Korean Egg Roll
Egg rolls, known as gyeran-mari in Korea, are like a rolled-up omelette. They are a popular snack or side dish in South Korean cuisine. They can be plain egg or can contain other ingredients, particularly meat and vegetables.
Korean Egg Bread
Egg bread, or gyeran-bbang, is a type of street food enjoyed in South Korea. It comprises of a corn muffin with an egg baked into it and offers a sweet and savoury flavour.
Korean Steamed Egg
Steamed egg, or gyeran-jjim, is a popular South Korean side dish that is similar to an egg souffle. The egg is traditionally steamed in an earthenware pot for the best results. It should be light and fluffy, with a custardy taste.
Eggs in Soy
Gyeran-jangjorim is the name of this dish, which sees hard-boiled eggs marinated in soy sauce. It is a fairly quick and easy dish to make and is commonly used as a side dish. It offers a sweet and salty flavour and adds a brown tinge to the eggs!

Korean Egg Roll Recipe
3 eggs
1 carrot
2-3 scallions
salt and pepper
oil for frying
- Finely chop the scallion and carrot into little pieces.
- In a bowl, crack and beat the eggs until the white and yolk are blended. Season the egg mixture with salt and pepper.
- Stir in the chopped vegetables.
- Heat a teaspoon of oil in a non-stick pan. Pour in half of the egg mixture, so the bottom of the pan is covered.
- When the egg starts to set on the top, lift one end of the egg and fold over to halfway into the mixture.
- Lift the folded part and fold again, so it is ¾ of the way folded.
- Move the egg roll over in the pan, so that there is more room next to the unfolded end and pour in the remaining mixture here.
- When this sets, begin folding the egg again, until it is in a log shape.
- Remove from the pan and let cool for a few minutes. Chop the roll into slices of about 1-inch thick.

Korean Steamed Egg Recipe
3 eggs
230ml vegetable or chicken stock
1 tsp fish sauce
1 tsp mirin
1 tsp salt
chopped scallion to garnish
- Using either an earthenware pot or small cast iron pot, heat the pot over a high heat.
- Mix the egg, fish sauce, mirin and salt in a bowl using a whisk.
- When the pot is hot, pour in your stock and bring it to a low boil.
- Pour the egg mixture into the pot with stock and whisk. Reduce the heat and whisk for a further minute, until it is silky and smooth.
- Cover the dish and let it steam for five minutes.
- Add chopped scallion to the top of the dish and serve immediately in the dish it was cooked in.
