Recipes for Cold Soba Noodles
Soba noodles are usually your best bet for cold noodle dishes, although rice noodles can work too. Japanese soba noodles are made from buckwheat and are traditionally served chilled with a dipping sauce. They have a slightly earthy or nutty flavour which pairs wonderfully with umami notes and the refreshing raw veggies of a salad.
This peanut noodle salad recipe serves two.
Peanut Soba Noodle Salad Ingredients
- Soba noodles (or rice noodles as an alternative)
- 2 carrots, peeled into ribbons
- ½ a cucumber, sliced thinly
- 100g sweetcorn
- 3 spring onions, diced
- Handful of radishes, sliced
- 75g sugar snap peas or mangetout
- Fresh coriander
- Sesame seeds
- Drizzle of sriracha
For the dressing:
- 2-3 tbsp peanut butter or peanut sauce
- 1-2 tbsp soy sauce
- 2 tsp sesame oil
- Squeeze of lime juice
- 2 cloves garlic, grated
- 1 tbsp maple syrup or honey
How to Make Peanut Soba Noodle Salad
- Once you’ve prepared all your veg, cook your noodles according to the packet’s instructions.
- Meanwhile, mix together the sauce ingredients in a small bowl. Taste and adjust as necessary. If you need to loosen the consistency, add a tiny splash of water.
- Once the noodles are cooked, drain and toss together with the veg and peanut sauce in a bowl. Top with the coriander, sesame and sriracha if desired, and serve.
