What is Nyonya Curry?
Nyonya curry is a Southeast Asian dish with roots in Malaysia and China. Ingredients for Singapore Style Nyonya Curry
- 1 tbsp cooking oil
- 1 sachet Singapore chicken curry spice paste
- 300g chicken, chopped
- 2 potatoes, peeled and diced
- ½ aubergine
- 330ml coconut milk
How to Make Singapore Style Nyonya Curry
- Heat the oil in a large saucepan. When hot, add the spice paste and stir fry for a minute.
- Add the chicken, potatoes and vegetables.
- Cook for a couple more minutes, stirring and then add the coconut milk.
- Bring to the boil and then lower to a simmer for 20 minutes.
