Making Ramen Broth
Making your own stock and homemade dashi yields some delicious results, but it can sometimes be a bit of a lengthy process, which isn’t ideal when you need a quick, comforting meal to get you through the week.
Ready-made shiro-dashi soup concentrate can be a great alternative to making your own broth completely from scratch. It will give your ramen a rich, umami flavour and elevate the noodle broth to a new level.
Chicken Ramen Ingredients
- 1 tbsp neutral oil
- 2 cloves garlic
- A few small slices of ginger
- 1 litre chicken stock
- 50 ml shiro-dashi soup concentrate
- 2 spring onions, chopped
- 1 tbsp light soy sauce
- 1 tbsp miso paste
- 2 packs of ramen noodles
- Toppings of your choice (shredded chicken, egg, beansprouts, crispy chilli oil)
How to Make Chicken Ramen
- Heat the oil on a medium-low heat, and gently fry the garlic and ginger for a minute until it releases its fragrance. Add the stock, shiro-dashi concentrate, spring onions and soy sauce and bring to a simmer for about 10 mins.
- Strain the broth, and stir through a tbsp of miso paste over a really low heat until it dissolves.
- Soak the ramen in boiling water for about 10 mins while the broth is cooking.
- Add the noodles to bowls, fill with the delicious soup broth and top with toppings of your choice – i.e. egg, shredded chicken, red chilli, beansprouts, coriander and crispy chilli oil.
