We’re always keen to share exciting ways to enjoy your noodles, so we’ve teamed up with @_eating_with_emma_ on Instagram to create a quick and tasty chilli oil and nduja udon noodle dish with puffed tofu.
What is Puffed Tofu?
Puffed tofu is cubes of tofu that have been deep-fried, and can be used as a meat substitute. They have a spongy texture and are chewy to eat. Puffed tofu is absorbent, so it’s great for soups, stews and sauce-based dishes, as it holds the flavour well.
Ingredients for Chilli Oil and Nduja Udon Noodles With Puffed Tofu
- Vegetable oil - 1/2 red onion - 1/2 red or green pepper finely - 2 handfuls shredded cabbage - 1 carrot - 2 packs udon noodles - 300g puffed tofu - 3 garlic cloves minced - 2 tbsp chilli oil - 3 tbsp dark soy sauce - 1 tsp black vinegar - 3 tsp nduja - 2 tbsp sesame paste - 1 tsp palm sugar - 2 tbsp hoisin - 2 spring onions
How to Make Chilli Oil and Nduja Udon Noodles With Puffed Tofu
1. Finely slice carrot, red pepper, and red onion 2. Combine chilli oil, nduja, vinegar, sesame paste, palm sugar, garlic, soy sauce, and hoisin, then add a couple of tablespoons of water to loosen. 3. Cook udon noodles in boiling water. 4. Fry vegetables in oil on high for 2 minutes; stir to avoid burning. 5. Add in the sauce and puffed tofu and stir to combine; cook for another 2 minutes. 6. Add a splash more water if the sauce is too thick, then add your cooked noodles. 7. Gently mix, so the noodles are covered with sauce. 8. Split into 2 bowls and serve with spring onion, a splash more soy sauce and chilli oil.
