Ramen is a delicious dish that attracts tourists and travellers to Japan, even though it actually originates from China. The first ramen to be eaten in Japan was by Mito Komon during the Edo Period in the 1600s. In a survey, most foreigners ranked ramen as their favourite Japanese food, over other popular options such as tempura and sushi. Until your next voyage to Japan, you can try and make your very own homemade ramen. Ingredients
- 2 medium chicken breasts (with the skin on)
- Pinch of salt
- Pinch of pepper
- 1 tablespoon of butter
- 2 tablespoons of sesame oil
- 2 teaspoons of minced ginger
- 2 teaspoons of minced garlic
- 3 tablespoons of soy sauce
- 2 tablespoons of mirin
- 1 litre of rich chicken stock
- 25g of dried shitake mushrooms
- 1 teaspoon of sea salt
- 2 eggs
- 70g of sliced scallions/spring onions
- 75g of dried ramen noodles
Method
Step 1
Preheat the oven at 170 C fan oven/gas mark 5
Step 2
Season the chicken with salt and pepper. Melt the butter in an oven-safe skillet. Fry the chicken skin side down over medium-high heat until golden brown for about six minutes, then flip the chicken breasts over and cook for a further five minutes.
Step 3
Transfer the chicken to the oven and roast for fifteen to twenty minutes or until the chicken is cooked through. Remove from the oven and cover with foil.
Step 4
Over medium heat, heat oil in a pot. Add garlic and ginger and let it simmer for a few minutes to soften. Stir in the soy sauce and mirin and let it cook for a further minute.
Step 5
Pour in the stock, cover and bring it to boil. You can then remove the lid and let it simmer for five minutes. Add the dried mushrooms, continuing to simmer the broth for five more minutes. Season to taste with salt.
Step 6
Using another pot for the eggs, fill with water and bring to the boil. While waiting for the water to boil, fill a spare bowl with ice. Softly add the eggs and let simmer for seven minutes.
Step 7
Transfer the eggs to the bowl of ice, this will prevent the eggs from continuing to cook. Add the ramen noodles to the water for two to three minutes.
Step 8
Divide the ramen noodles between the serving bowls. Once the eggs have cooled down you can start to peel away the shell and slice down the length of the egg.
Step 9
Thinly slice the chicken. Divide the chicken and broth between the serving bowls. Add the eggs and sprinkle the scallions.
Step 10
Serve and enjoy your very own homemade ramen.
