Ingredient - Miso Paste

Miso refers to fermented beans in Japanese. Miso paste is made with rice or barley and aged from 6 to 36 months. Miso paste provides a fifth taste, known as ‘umami’ and it can be used to make various dishes including soup, salad dressings, stews and marinades.

You may not know that in the fermentation process, millions of beneficial bacteria would be generated. It may sound terrifying. In fact, however, it contains high level of vitamins B, E, K, copper, folic acid and zinc which energises our body, stimulates digestion and enhances immune system.

Here is a quick instruction for Miso soup:

Add dashi stock and boiling water to the paste and stir well to dissolve. Garnish the soup with cubes of tofu, strips of dried seaweed or cooked seafood.
