You will need:

  • 120g pork mince (you can also use beef if preferred)
  • 2tbsp soy sauce
  • 1tsp salt
  • 2tbsp cooking oil
  • 1 jar of Sichuan spicy noodle sauce
  • 4 spring onions, finely chopped
  • A handful of peanuts, roughly chopped
  • 200g dried egg noodles (or 300g fresh noodles)

Method:

1. Start by combining the pork, soy sauce and salt in a bowl, mixing until combined and loose. 2. Heat the oil in a wok and add the pork mince mixture. Fry the meat until it is crispy - this will take around 5 minutes. Remove from the wok with a slotted spoon and set aside in a paper towel-lined bowl.3. Fry the spring onions and peanuts until fragrant, then set aside. These will be your finishing garnishes. 4. Cook your noodles in a large pan of boiling water according to the packet’s instructions. 5. When the noodles are almost ready, heat your ready-made sauce in the wok before adding your fried pork. Ensure this mixture is heated through. 6. Drain the noodles and dish them into your bowls. 7. Spoon over your sauce and top with the onions and peanuts that you set aside previously. Serving suggestion: When cooking the noodles, you could also add in some pak choi in the last few minutes for extra bulk and flavour!Discover the ingredients right here at Oriental Mart to have a go at making this classic dish at home!
