Ichigo Daifuku Strawberry Mochi Recipe
Ichigo daifuku, or strawberry mochi , is a delicious sweet treat from Japan, often particularly popular around springtime. This delicacy consists of a fresh juicy strawberry wrapped in a sweet bean paste and soft mochi dough. With the combination of the tart fruit and succulent mochi, it’s no surprise these little bites are a Japanese favourite!Originating from the 80s, ichigo daifuku is a relatively new treat just waiting to be enjoyed. Depending on where it’s made, the mochi can have either a red or white bean filling. Luckily, with a bit of know-how and the right ingredients, springtime strawberry mochi is surprisingly easy to make at home! You Will Need
- 6 fresh strawberries
- 180g red or white bean paste
- 180g glutinous rice flour
- 120ml water
- 20g sugar
- 2tbsp potato starch or cornstarch
Method
1. Prepare your strawberries by washing them and cutting off the stems.2. Divide your bean paste into 6 even balls before flattening into discs. Wrap each disk around a strawberry and set aside.3. To make the mochi dough, combine the flour, water and sugar in a bowl. Mix until thoroughly combined. 4. Cover the bowl with cling film and microwave for 1 minute before removing to mix. Microwave the mixture for a further minute and mix again. Heat for just 30 more seconds - the mixture should now resemble translucent mochi!5. Sprinkle some of the cornstarch onto a flat surface before turning your mochi onto it. With well-floured hands, divide the dough into 6 equal balls. 6. Flatten the mochi as you did with the paste and wrap your prepared strawberries, gathering the ends until the fruit is completely covered in mochi. Repeat the process with all 6 strawberries.
