What is Khao Muu Daeng?
Khao Muu Daeng is a popular Thai street food and is a standard fixture in food courts. The dish consists of red BBQ pork (or Chinese char siu) on a bed of rice, smothered in a moreish gravy sauce. It is usually served with boiled eggs, sliced cucumbers and a dipping sauce.
The BBQ pork recipe below will yield around 4-5 portions.
Khao Muu Daeng Ingredients
BBQ pork:
- 2 pieces of pork loin or shoulder
- 3-4 tbsp Lobo BBQ pork powder
- 1 tbsp soy sauce
- Some salt and pepper
- 1/2 cup water
BBQ sauce:
- 2 tbsp Lobo BBQ powder
- 2 tbsp hoisin sauce
- 2 tbsp palm sugar or brown sugar
- 1 tbsp soy sauce
- 1/2 cup water
- 1 tbsp sesame seeds
- 1/2 cup of corn flour water (2 tbsp corn flour + 6 tbsp water)
Cucumber soup:
- 1/2 cucumber, deseed, cut to bite size
- 2 tbsp chicken stock powder
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 2-3 rock sugar
- Ground pepper
- Some coriander and spring onions (chopped)
- 2-3 cups water
Dipping sauce:
- 1 red chilli, sliced
- 1 tbsp of each: sweet dark soy sauce,
- vinegar & soy sauce
Extras:
- Some cooked rice
- Boiled eggs
- Cucumber
- Coriander
How to Make Khao Muu Daeng
- To make the BBQ pork: marinate the meat with the BBQ powder, soy sauce, sugar, salt and pepper and water – mix well. Leave it to marinate for 20 mins or overnight. Bake in the oven at 220°C for 20-25 mins. Let the pork cool down and slice it into bite-size pieces.
- To make the BBQ sauce: add the BBQ powder, water, hoisin sauce, palm sugar or brown sugar and soy sauce to a pan over a medium heat and mix well. Add the sesame seeds and corn flour water and continue stirring until the sauce thickens.
- To make the cucumber soup: add water to a small saucepan and bring it to the boil before adding the cucumber, seasoning, soy sauce, fish sauce and rock sugar. Mix well and add the ground pepper, coriander and spring onion before turning off the heat.
- To make the dipping sauce: add all the dipping sauce ingredients together and mix.
- Plate up: put your BBQ pork over rice, and add the boiled egg, cucumber and BBQ sauce. Sprinkle on some coriander and Serve with the dipping sauce and cucumber soup.
