Thai Green Curry
By far the most popular and a fun favourite to introduce to family meals or date night. Named after it’s vivid colour, Thai green curry contains an array of vegetables and coconut milk to cut through the spice.
Made from young chillies, basil and coriander to give it its vibrant colour, the Thai Green Curry is considered the hottest, and is a fond favourite for those who adore Thai food.
Thai Red Curry
Similar to the green curry, Thai red gains its colour from the chillies, which are are, unsurprisingly, red.
The chillies are soaked to remove the harshness of the heat. They are then crushed and combined with shallots, ginger, lemongrass, garlic and fish paste to create a fragrant and spicy dish.
It may not be as spicy or sweet, but the red curry is still worth your while. With a red chilli base and crushed garlic, lemongrass and ginger, it’s bound to make an impression on your palate.
Thai Yellow Curry
A much milder cousin of the Thai green and red curry, Thai Yellow curry focuses on a more sweet taste with hints of heat.
The curry powder is a concoction of cumin, coriander and lemongrass, along with other favourites such as garlic, ginger and chillies. Depending on your preference you may prefer this curry.
Khao Soi Soup
A northern recipe that captures the hearts of those who travel through Chang Mai, Khao Soi Soup is highly recommended by any local or fellow traveller.
A hot, sweet, salty curried soup with crunchy noodles, with such diverse textures and complex but complementary flavours, it’s definitely a favourite to be tried.
A hidden gem for this who haven't visited Chang Mai. This curried noodle soup is exquisite. With crispy egg noodles and a coconut milk spicy soup, you’ll wish you'd tried this speciality sooner.
Penang Curry
A thick Thai curry that hits sweet, salty and nutty notes. Being much sweeter and milder than Thai green and using the same curry paste as red.
The creamy sauce includes soft and crisp textures from the selected vegetables. These can be bamboo shoot, peppers and onions.
Massaman Curry
A much more earthy taste, with warming spices, Massaman takes a similar approach to Penang but with spices such as cinnamon, cardamom and cloves.
With the addition of peanut and sweeter spices, this curry will take you on a different journey. Substituting the spice for such sweetness, this is a good dish to start with when exploring the aromatic world of Thai cuisine.
